Description

Its name literally means “cooked twice”: the first during the heating of milk for the production of cheese, the second during the heating of serum.
Once the coagulation temperature is reached, the whey proteins aggregate in flakes, trapping also the fat contained in the mixture: the ricotta cheese is collected with a ladle and placed in the fiscelle.
