Characteristics: the strawberries are cooked at a low temperature, with the vacuum method the water contained in the fruit is extracted, thus concentrating the fruit pulp without the use of pectin. At the end of cooking, the black gold of our lands is added to enrich the compote: Balsamic Vinegar of Modena I.G.P.
Tasting: ideal on all types of cheeses, for creaming risotto and on ice cream (cream base).
What the earth gives us: STRAWBERRIES which by their nature are spring, rich in flavonoids and anthocyanins.
